    The lambs are born in late winter, and when it warms up they and their mothers are put out on pasture. Towards the end of the summer when the fields are eaten down, the lambs are weaned and given access to a barn. There they can eat free-choice organic hay and a sprinkle of grain or corn cobs for extra growing protein. When it gets cold, we bring them inside. They are given free-choice hay from our certified organic hayfields and a little grain, both for heat in the cold NH winters and to increase their marbling, the intra-muscular fat that makes meat taste good and is the reason why people rave about our meat. Sometime before Christmas the lambs are sent to a local slaughterhouse for processing. We sell lamb by the cut, whole, or half animal.
